Spaghetti Squash Gratin

I've been trying to watch my calories.... yet again. When Jenny was home for the holidays she suggested I try spaghetti squash gratin. I used this recipe Jenny recommended and was very pleased with the results. The recipe called for 8 ramekins but I used a 9 X 13 casserole.



Because the recipe calls for mostly vegetables, I think the entire pan only had 17 Weight Watcher points. The points came from a teaspoon of olive oil, 1/2 cup of Parmesan cheese and 15 ounces of low fat ricotta cheese. (The recipe called for fat-free ricotta but I use low fat.) I will make this again :)

No,I think the recipe was from Cooking Light originally. You can get the recipe by "clicking" on the purple word "recipe".

I got it. I didn't notice the highlghted "recipe." I probably have the original magazine in the basement.
