Spaghetti Squash Gratin

I've been trying to watch my calories.... yet again. When Jenny was home for the holidays she suggested I try spaghetti squash gratin. I used this recipe Jenny recommended and was very pleased with the results. The recipe called for 8 ramekins but I used a 9 X 13 casserole.



Because the recipe calls for mostly vegetables, I think the entire pan only had 17 Weight Watcher points. The points came from a teaspoon of olive oil, 1/2 cup of Parmesan cheese and 15 ounces of low fat ricotta cheese. (The recipe called for fat-free ricotta but I use low fat.) I will make this again :)

Fabric Art in North Carolina

Last week we visited my brother-in-law in North Carolina. While there we visited a shop in Asheville which sold a variety of local artists' work. There was pottery, wood furniture and jewelry, but my favorite was the fabric art. Below are some photos of some of my favorites.

Kermit Christmas Stocking

Some of my friends have grandchildren or grandpuppies but I have a grandfrog. Angela and Austin have a frog, Killer. While they are living in Spain, Killer is in foster care in NYC.

I had promised to make Austin a Christmas stocking a couple of years ago. He wasn't here for Christmas in 2010 before they got married and last Christmas they stayed in Spain. Since they were going to be here this year, I figured I had better follow through on my promise. I made Austin a Kermit the Frog stocking using a vintage pattern I found on EBay.



The stocking was made with wool felt and lined with a cotton Christmas print.



Another Christmas project...an owl pillow for Jenny.
